recipe for Welsh Cakes, or pice bach (I think)

ingredients

225 grams or 8 ounces of FLOUR

85 grams or 3 ounces of SUGAR

a little bit of BAKING POWDER if it was plain flour

a little bit of SALT

a little bit of any nice SPICE that you fancy. I used cinnamon and nutmeg

100 grams or 4 ounces of FAT, maybe half BUTTER and half VEGETARIAN LARD

50 grams or 2 ounces of CURRANTS

one EGG

maybe a little bit of MILK

maybe a bit of CASTER SUGAR

instructions

Mix the flour and sugar and salt and spices and baking powder.

Rub in the fat till it goes crumbly.

Mix in the currants.

Beat up the egg, and stir it in to make nice soft dough. Add a bit of milk if it’s too dry.

Roll the dough out quite thin, and cut circles.

Heat some of the fat in a frying pan.

Cook the Welsh Cakes for a few minutes on each side until they look delicious.

Try not to burn them.

If you like, you can dunk them in caster sugar while they’re still hot. I didn’t do that, because I didn’t want to get sugar in my bicycle panniers, but it probably would make them more delicious.
